From these origins the recipe evolved to a staple of Madrid Cuisine. During the 19th and 20th centuries, due to its reduced cost, became popular in small restaurants and taverns catering to manual workers.

Nowadays, Cocido Madrileno is mostly a Homemade dish for special occasions

Madrid Stew is a dish that I have been eating since my childhood. For me it is one of those homemade recipes that we should never lose and should include in our family menus.

Madrid Stew it has many variants and different ways of cooking but it definitely has something special...it is always delicious.

I am presenting today a very simple and easy to way to cook this Stew. A good plate of Madrid Stew will always warm you body up, especially on cold days of winter. 

INGREDIENTS for 4 people:

- 2 Tins of Chickpeas.
-1 Red Pepper.
-1 Leek.
- 1 Big Potato
- 300 grams of Boneless Chicken Thigh.
-300 grams of Beef for Stew.
- Salt.
-1 litre of Water.
