33 - BROAD BEANS, SPANISH HAM AND FRIED EGGS (HABAS CON JAMON Y HUEVOS FRITOS)


Broad Beans and Spanish Ham is a typical dish from the Andalusian province of Granada. 

This dish consists of green Broad Beans fresh, frozen or canned ones. Generally of small size and are cooked in Olive Oil along with Serrano Ham strips or cubes. This dish is usually served hot, sometimes accompanied by one or two fried eggs per person.

Although it is traditionally from Granada can be found elsewhere in Andalusia Region and it is said that King of Spain considers it as his favourite meal.



INGREDIENTS for 2 people:

- 600 grams of Small Fresh or Frozen Green Broad Beans or Two tins of Green Broad Beans.

-300 grams of Spanish Ham Cubes.

- 3 Garlic Cloves (Sliced).

- 4 Eggs (2 Fried Eggs per person).

- 1/2 teaspoon of Salt.

- 1 Glass of White Wine.

- Olive Oil.

- A good Bread to dip into Fried Eggs.



STEP 1 - Get all main ingredients ready.
STEP 2 - In a big frying pan...
STEP 3 - Add enough Olive Oil to cover its bottom and bring the hove to maximun heat.
STEP 4 - Add the Garlic Slices...
STEP 5 - ... and the Broad Beans and mix very well.
STEP 6 - Cover the pan with a lid and allow to cook at medium hove power for about 10 minutes, given a stir from time to time.

STEP 7 - Then add the glass of White Wine, the 1/2 teaspoon of Salt and mix all up very well...

STEP 8 - ...cover the pan again and allow to cook for extra 10 minutes, giving a stir from time to time.

STEP 9 - At this point Broad Beans should be soft enough to be eaten but still we need to add the Spanish Ham Cubes.
STEP 10 - Add the Spanish Ham Cubes into the pan...
STEP 11 and 12 - Mix it very well and allow to cook the Broad Beans and Ham for about 1 minute.

STEP 13 - Then you can add a couple of Fried Eggs on your dish. Enjoy your meal!!!

  1. This is so delicious!! couldn't believe. Although i added chopped carrot and swapped the wine for cider (plus a splash of vinegar)
