45 - ASPARAGUS IN SCRAMBLED EGGS (REVUELTO DE ESPARRAGOS)


A "Revuelto" is a dish of Scrambled Eggs. In Spain, you will find "Revueltos" on menus with a variety of ingredients such as Mushrooms, Serrano Ham, Prawns, Mussels... mixed into the Eggs. Can be served just as easily for breakfast, lunch or dinner. I served with Toasted Bread, some Serrano Ham and Spanish Wine, and it was very well received.
