37 - PATATAS BRAVAS

Patatas Bravas are potatoes cut into irregular dices of an inch in size, fried in Oil and served with Spicy Tomato sauce  poured over.

This dish is very common in bars in some parts of Spain, where usually are  accompanied by Beer or Wine, served as a portion containing about a quarter kilo of potatoes, or as a Tapa. Generally considered one of the cheapest Tapas due to the low cost of ingredients and it is suitable for Vegetarians.



INGREDIENTS for Brava Sauce:

- 2 of 400grams Tins of Chopped Tomatoes.

- 1 Teaspoon of Sugar.

- 1 White Onion.

- 2-3 Cloves of Garlic (Chopped). 

- Cayenne (the amount needed depending on how spicy you like the Sauce).

- 1 Teaspoon of Hot Paprika (can mix with Sweet Paprika).

- A Splash of Sherry Vinegar.

- Extra Virgin Olive Oil.

- 1-2 Teaspoons of Salt (Depending on your taste).

STEP 1 - Get a frying pan ready.
STEP 2 - Put some Olive Oil...
STEP 3 - ...and sauté the Onion with a pinch of salt over medium-low heat.
STEP 4 -  When the Onion becomes clear and squishy, add the chopped garlic and continue sautéing until done.
STEPS 5&6 - Add the Cayenne and Paprika and stir it up all together for about 1 minute...

STEP 7 - Then pour the grated Tomato, Salt and up the heat and add a splash of Sherry Vinegar.
STEP 8 - When the Tomato Sauce starts to boil, reduce heat and cook until almost completely evaporate the water from the Tomatoes and stir up from time to time.
STEP 9 - Once the Brava Sauce is cooked you can blend it in the mixer to improve the texture.Now you just have to make some good chips to dip them. Enjoy!
