35 - BAKED SWEET POTATO WITH ROSEMARY (BONIATO ASADO CON ROMERO)



Typical autumn Sweet Potato recipe in  some places in Spain.

I do not really like Sweet Potato too much when preparing sweets but I love it with a hint of Salt.

This recipe is very quick and easy to make and the end result is very aromatic roasted Sweet Potatoes. It can be served as a pecking appetizer for a meal with friends or as an accompaniment to meat or fish dishes.

INGREDIENTS for 2 people:

- 3 Regular size Sweet Potatoes.

- 3 Tablespoons of Olive Oil.

Fresh Rosemary if possible but if not possible then use dry one).

- Salt.



STEP 1 - Get the Sweet Potatoes ready.
STEP 2
STEP 2&3 -Peel the potatoes and cut into small squares.
STEP 4 - Place them into a baking tray...
STEP 5 - ...sprinkle it with fresh Rosemary leaves...
STEP 6 - ...add Olive Oil,  Salt and mix it all up very well.
STEP 7 - Introduce the try into the oven at 180 C for about 30 minutes.
STEP 8 - After 15 minutes or so take the Sweet Potatoes out , give a good shake to them and place them back into the oven for another 15 minutes.
STEP 9 - Sweet Potatoes are ready...
STEP 10 - ...to be served hot.
