Chicken in Almond sauce it is very tasty and easy recipe to prepare. In many Spanish homes dishes similar to this are cooked often during the year. So I suggest you should give a try to it. :-)
INGREDIENTS for 4 people:
- 8 Pieces of Chicken Legs (without skin).
- 1/2 Half Onion.
- 4 Cloves of garlic.
- 1/2 Glass of White Wine.
- A Slice of Bread (two or three days old).
- 1/2 teaspoon of Paprika.
- 1/2 teaspoon of Saffron.
- 1/2 teaspoon of Rosemary.
- 1/2 teaspoon of Thyme.
- A little salt.
- 1 Glass of Water.
- A few blanched Almonds.
|STEP 1 - Get the 8-9 pieces of Chicken ready without skin.|
|STEP 2 - Cut the Onion into strips (not too wide strips)...|
|Step 3- ...and the Garlic Cloves into slices.|
|STEP 4 - Get the Paprika and Saffron ready.|
|STEP 5 - Get the Rosemary and Thyme ready.|
|STEP 6 - Get the Almonds and Garlic ready.|
|STEP 7 - In a Pan add Olive oil till cover the bottom of it.|
STEP 8 - Add the Chicken pieces and let them go gilding about 10 minutes over medium heat.
|STEPs 9,10 & 11 - Add the Onion Slices and allow cooking for 5 minutes.|
|STEP 12 - Add the Glass of White Wine and Salt...|
|STEP 13 -...cover the pan and allow cooking for another 5 minutes.|
STEP 14&15- In the meantime, we are going to prepare the base of the Sauce. So we need 2 tablespoons of Olive Oil, 3 Cloves Garlic, a handful of raw Almonds and some 2-3 days old Bread.
|STEP 15 - First fry the Garlic, then Bread, and finally the Almonds. Be careful with them because they only have to get a nice golden color. If Almonds get burnt will become bitter in taste.|
|STEP 20 - Add seasonings and spices. (Saffron, Paprika, Rosemary and Thyme).|
|STEP 21 - You can store the remaining Chicken in an airtight container and freeze it. You will have food for another day. Check them with chips, boiled potatoes, cooked rice .... Rice mixed with this sauce is just delicious.|
