24 - SPANISH RICE PUDDING (ARROZ CON LECHE)


Rice Pudding is a dessert typical of many countries cuisine and generally is made ​​slowly cooking rice in milk with sugar. The Spanish version of Rice Pudding is usually made adding cinnamon and lemon peel too.

In the vast majority of Spanish bars and restaurants, home-made Rice Pudding is almost always included in the desserts menu. So you know, next time you go to a restaurant in Spain do to forget to order your portion of this delicious dessert.

INGREDIENTS for 4 people:

- 6 Tablespoons of rice.

- 1 Lemon peel.

- 3/4 of litre of Milk.

- 6-8 Tablespoons of Sugar (depending how sweet you like it). You can use White or Brown Sugar.

- Ground Cinnamon.

- Water.



6 Tablespoons of Rice (it is better to use fat grain Rice rather than Basmati rice). For this recipe Japanese Rice was used.

6 Tablespoons of brown sugar.

Lemon Peel.

STEP 1 - Add abundant water into a deep-pan and bring it to boil...

STEP 2 - ... when water is boiling then add the rice.

STEP 3 - And cook the rice for about 10 minutes or so.

STEP 4 - Drain the rice in a colander.


STEP 5 - In another deep-pan...

STEP 6 - ...add the 3/4 of litre of Milk, the whole Lemon Peel and cook to medium-high heat stirring the Milk now and then.

STEP 7 - Then add the rice and the sugar into the hot milk...

STEP 8&9 - and cook the Rice for another 10 minutes. Keep stirring the mixture every 3 minutes or so (do not forget to remove the lemon peel before serving).

STEP 9 


STEP 10 - Fill with an empty bowl with the mixture of Rice and Milk till reaching more or less the mid level of it.

STEP 11 - Sprinkle the pudding with grounded cinnamon to your taste and place the pudding into the refrigerator for 2-3 hours.

STEP 12- This is the rice pudding after 3 hours in the fridge. It was so delicious!!!!!
