23 - ROASTED PEPPERS' SALAD (ENSALADA DE PIMIENTOS ASADOS)



Today we will see how to make a baked roasted peppers salad that is very popular in South of Spain. I will also teach you how to roast peppers so you can use them for other recipes that may need them. 

In Spain you can see this salad as a starter and as a Tapa. It is served either at room temperature or cold. It is a very easy to make salad and you will get amazed to see how with so little ingredients you can create such a nice and tasty dish. Because roasting and peeling the Peppers can take a little bit of time, it must be done in advance, but it is well worth it.


INGREDIENTS for 4 people:

- 8 Red Bell Peppers (You can also use a mixture of Yellow and Green Peppers).

- 1 Onion.

- 1/2 lemon.

- Extra Virgin Olive Oil and Sherry Vinegar.

- Salt.




STEP 1 - Get the Peppers ready to bake, wash and dry them. Preheat the oven at 250 º C.  


STEP 2 - Place the Peppers on a baking tray...

STEP 3 - ...and intert it into the oven.

STEPS 4,5,6,7 and 8 - After 7 minutes turn the Peppers round and put back in the oven for another 7 minutes or so, do this a few times till you are able to see black blister all around the peppers as shown in the pictures here.

STEP 8 - Then remove the peppers from the oven, place them in a dish and put the in the refrigerator for 15 minutes to cool them down.
STEP 9 - Then peel the Pepper and remove the majority of the seeds, you will notice that the Peppers will release its own juice.

STEP 10 - Then get ready a tray...

STEPS 11, 12 - ... where you will place the Peppers already cut into 1 cm width stripes as seen in the pictures.

STEP 12 - Once all the Peppers are in the tray, add the Pepper's juice.

STEP 13 - Cut the Onion into 2 halves and chop each half into slices like these ones.

STEP 14 - Add the Onions into the salad...

STEP 15 - ...and add the juice of 1/2 lemon, Olive Oil, Sherry Vinegar, and salt to your own taste and mix all very well. So you can either eat the salad fresh made or put into the fridge for 1-2 hours and eat cold or even for next day.
