14 - SIZZLING PRAWNS IN GARLIC, CHILLI & OLIVE OIL (GAMBAS AL PIL-PIL)


  

Gambas al Pil-pil is a famous Spanish tapa of Prawns from south and centre of Spain, served in a hot sizzling Sauce of Garlic, Chilli and Olive Oil. This tapa is so popular in Spain that in restaurants in Madrid is served as a main dish.

Gambas al Pil-pil is one of my favourite tapas. They are usually cooked and served sizzling hot in individual terracotta dishes (called cazuela de barro in spanish), but if you can not find them in your country, you can use small pan or even a cast iron gratin dish as used in this recipe. Sometimes a few slices of dried hot red Chillies or Chilli flakes are used to confer to the dish a slight hot flavor and also can be used a 1/2 teaspoon of Hot Paprika Powder.

This tapa must be eaten hot (not allowing to become cold) along with a good quality Bread to dip into Garlic Sauce and the perfect matching drink is white or red wine.

INGREDIENTS for 2 people:

- 12 peeled big Tiger Prawns.

- Extra Virgin Olive Oil.

- 1/4 glass of White Wine.

- 3 Garlic Cloves (chopped roughly).

- 1/2 teaspoon of chopped Fresh Parsley.

- 1/2 teaspoon of Hot Paprika Powder.

- 1/4 or 1/2 teaspoon of Salt depending on your taste.

- 1/2 teaspoon of Chilli Flakes or 2 little dried Chillies sliced.

- A good Bread to dip into Garlic sauce while eating Prawns.


12 peeled big Tiger Prawns.
3 Cloves of Garlic chopped.
2 little red dried Chillies...
...chopped.
1/2 teaspoon of chopped fresh Parsley.
STEP 1 - Get ready a cast iron gratin dish or small pan.
STEP 2 - Add enough Olive Oil to cover the bottom of the dish over a medium-high heat.
STEP 3 - When the Oil start foaming, add the chopped Garlic and slightly stir fry for 20 seconds or so.
STEP 4 - Then add the Chilli...
STEP 5 - And stir fry the mixture for another 20 seconds or so.
STEP 6 - then add the Prawns and slightly stir them.
STEP 7 - Now add the 1/4 glass of white Wine and Salt.
STEP 8 - Cook the Prawns for about 4 minutes until they curl up and change to pink color.
STEP 9 - Sprinkle with the Paprika and mix very well. Then turn the heat off.
STEP 10 - Add the Parsley and mix very well.
STEP 11 - The Prawns are ready serve.
STEP 12 - You will need a good Bread to dip into Garlic Sauce and to make the most of it....ah and do not forget either a good Wine.
