12 - ORANGE, ONION, TUNA AND BOILED EGGS SALAD (ENSALADA DE NARANJA, ATUN, CEBOLLA Y HUEVO DURO)



This is a variety of Malaga's Salad (Typical from province of Malaga in the Region of Andalusian in the South of Spain) but without boiled potatoes, green olives and without Dried and Salted Cod, and using tin tuna in stead. This dish is usually dressed with Cherry Vinegar, Extra Virgin Olive Oil and salt. Its a very delicious, refreshing and extremely easy to make salad and when it is properly dressed it does not seem you are eating orange in it.


INGREDIENTS for 2 people:

- 3 good regular size Oranges.

- 1 White or Red Onion.

- 3 Boiled Eggs.

- 2 Tins of Tuna in Sunflower Oil.

- Extra Virgin Olive Oil, Sherry Vinegar and salt.


STEP 1 - Have 3 regular sized oranges.
STEP 2 - Peel the oranges and cut into 1/2 cm slices.
STEP 3 - Place the orange slices into a dish so that you are making and orange bed.
STEP 4 - Cut the onion into 1/2 cm slices.
STEP 5 - Place the onion slices onto the orange slices.
STEP 6 - Place the boiled eggs cut into slices.
STEP 7 - Get the tuna ready and place in a bowl after draining the tuna oil away.
STEP 8 - Place the tuna onto the rest of the salad ingredients and then put the salad into the fridge for 1or 2 hours. After these 1-2 hours in the fridge, just dress the salad with Extra Virgin Olive Oil, Cherry Vinegar and salt to taste. Then the salad is ready to be eaten.
